Peasant foods, for most of human history, has sustained life.  Nutritionists have often noted that
immigrants who stuck with their accustomed plant based diet from the old country remained healthy.  When
their children start to switch to a typical American diet, they start getting sick. One of the first to notice this
in the medical community was Dr. John McDougall who practiced in Hawaii.  He had many Japanese and
Chinese patients who were working in the fields.  He observed that the first generation, who kept to their
traditional diet, were healthy throughout their lives.  The second and third generation were progressively
less healthy.  He studied this situation and discovered that as their dietary habits migrated to the American
style, they became less and less healthy  This ultimately caused him to completely reorient his method of
practicing medicine from one who treated the illness of a patient to one who advocated a change in
lifestyle so that the patients would not get sick in the first place.

Mother Nature has not been kind to us relative to our food preferences and the way we consume
food.  This is our negative inheritance.

1.       If we really like something, we tend to want more and more of the same thing.  We have a
built in bias toward short term consumption.
2.       Foods that contain salt, sugar and fat have an addictive quality that is equal to cocaine.  
3.       The most direct route to the brain is through our sense of smell which is directly linked to
our tongue.
4.       Meat and fat tend to taste better to us than vegetables.
5.       The tongue tells you what it likes but the endothelium has no voice.

There is an ancient proverb, “The tongue is the enemy of the neck.”  Here in America, nobody is going to
string you up for speaking out but tongues around America have killed and will kill far more people than
kings or emperors of old ever did for an unwise word.  Your tongue is the enemy of your survival.

kinds available to us. With today’s transportation system we have access to it all. Many exotic foods that a
generation ago were inaccessible are now in the supermarket.  We have choices.  Everywhere people like
good food and have worked hard to develop great recipes.  We merely have to adapt them to our needs.

There are many diets and books out there in the market place.    Here are some.

Dr. John P. Cooke, a research professor at Stamford in “The Cardiovascular Cure” has a diet that
emphasizes foods that contain L-arginine and discusses supplements to accompany it.

Dr. Caldwell B Esselstyn, Jr., “Preventing and Reversing Heart Disease” has the longest continuing running
group study.  His book focuses on diet and exercise.

Dr.  Louis J. Ignarro, one of the Nobel winners and a professor at UCLA has a diet book, ”NO More Heart
Disease”.  The NO, of course being a pun relating to nitric oxide.  This book too discusses exercise and
diet and supplements.

Dr. John A. McDougall’s book is. “The McDougall Plan for a Healthy Heart”  This too  focuses on
diet/exercise and supplements.  

Dr. Dean Ornish  “Dr. Dean Ornishs’ Program for Reversing Hear Disease” was the first to make a rigorous
scientific study.  It too covers diet/ exercise/meditation.

Dr. Julian M. Whitaker  "Reversing Heart Disease"  He is a pioneer whose book dates back to the '80s.  He
too started out with a surgical background but moved to diet and exercise as a better mode of treatment.

21 Day Kick Start - from the Physicians Committee For Responsible Medicine - provides a meal plan that is
sent out to you weekly on your request.  It is designed to ease your move to a plant based diet.

On the web there are thousands of vegan recipes from which you can choose

There are many ways to adapt. Each person has to find their own way consistent with what they want to
accomplish. I really stay on my diet except for six times a year when I ignore the dietary rules entirely.  I
have found that by staying on the diet 179 meals out of 180 seems to work for me. For some this could be
deadly if your system were fragile. It is important that you understand your own situation.

There is one further factor that you may wish to consider and that is
cancer. It too is affected by the kind
of diet you select.  It is part of the troika of death: heart disease, stroke and cancer.  You can largely
